These scallops are made by boiling large scallops from Miyagi Prefecture. The scallops are first submerged in hot water, then in iced water, and then the scallops are seasoned with sweet and spicy broth and cooked at a low temperature to soak up the flavors. The inside of the scallop is finished medium so that it is smooth to the tongue.
