The second stage of salting is the school's top secret.
Since this is the way to do it, we have omitted it.
After the salt pickling is completed, the salt is lightly removed and the sake is added.
Soak for 3-4 days.
This is where we adjust the flavor, moisture content, etc.
It's still a long way to go, but I loved it carefully every day.
