Shinko are known as juvenile kohada or konoshiro and are only 4 to 6 cm in size. This refers to the state they are in when they are born, which is about 4 months. When they grow up to 7-10 cm, they are called kohada; when they grow up to 15 cm, they are called nakazumi; and when they grow over 15 cm, they are called konoshiro.
It is one of the most time-consuming and labor-intensive items in Edomae sushi.
